The Joy of Cooking

Cooking everyday for a family of six has become a chore. The reason for that is not that I don't enjoy cooking; it just takes time that I would rather spend playing or reading to my children. Nevertheless, I love learning new things, cooking favorite recipes, and throwing parties.

This week I attended a Relief Society Enrichment on Tuesday, where a sister from our ward taught us not only how to make quick bread, but how to use the bread dough in various ways. On Thursday, my friends and I got together for our monthly Recipe Exchange, with this month's theme being 'pies.' On Saturday, I attended a baby shower, and I made a soup and a salad to share. During the whole month of October as well as these weeks of November, we've had guests each Sunday. I felt bad serving Frozen Pizza to my children for Sunday Dinner, so I decided to invite guests, that way I would feel obligated to cook good food.

I would like to share with you two bread recipes that I learned this week, three pie recipes (one that I made for the Recipe Exchange and two that I wanted to make for Recipe Exchange but didn't have time) and one soup recipe that is very tasty and is always liked by my family and guests.

Easiest Whole Wheat Bread

2 loaves
3 1/2 c. whole Wheat flour
1/3 c. gluten flour
1 1/4 T. instant yeast
2 1/2 c. steaming hot water
1 T. salt
1/3 c. oil
1/3 c. honey or 1/2 c. sugar
1 1/4 T. bottled lemon juice
2 1/2 c. whole wheat flour

4 loaves
7 c. whole wheat flour
2/3 c gluten flour
2 1/2 T. instant yeast
5 c. steaming hot tap water
2 T. salt
2/3 c. oil
2/3 c honey or 1 c. sugar
2 1/2 T. bottled lemon juice
5c. whole wheat flour

Mix together first three ingredients in mixer with a dough hook. Add water all at once and mix for 1 minute; cover and let rest for 10 minutes. Add salt, oil, honey, or sugar and lemon juice and beat for 1 minute. Add last flour, 1 cup at a time, beating between each cup. Beat for about 6-10 minutes until dough pulls away from sides of the bowl. This makes a very soft dough.

Pre-heat oven for 1 minute to lukewarm and turn off. Turn dough onto oiled counter top; divide, shape into loaves, place into oiled bread pans. Let rise in warm oven for 10-15 minutes until dough reaches top of pan. Do not remove bread from oven; turn oven to 350 F and bake for 30 minutes. Remove from pans and cool on racks. -Leslie Probert-

On Enrichment night, Sister Bragg used the 4 loaf recipe. She put cinnamon, raisins, walnuts, and brown sugar in one loaf. She used jalapeno and three different kinds of cheeses in another. She put calamari olives, rosemary, and cheese on another. The dough for the last loaf she made into a pizza crust and put on it sun-dried tomatoes, pickled artichoke, olives, rosemary, mushrooms, and mozzarella. All of them were delicious. You can change the dough into something different every time you put various toppings or fun mixes of vegetables/fruits and spices. Go and try your own and have fun with it!

No knead Bread Recipe
1 loaf

3 c. bread flour
1/4 tsp instant yeast
3/4 T. kosher salt
1 1/2 cups warm water
covered pot (something that can go into a 450 F oven.)

Mix dough till all the ingredients are mixed well. Pre-heat oven to 200 F. Put your dough into your pot and place pot in the oven for about 20 -30 minutes. Your dough should have doubled in size. Shape it and

Bake your dough as a loaf, rolls, or pizza crust in 450 degrees F for about 30 minutes. Leave it for another 15 - 20 minutes or until the crust is beautifully golden in 210 degrees F.

That night, she rolled the dough out as a pizza crust and placed on it pears, candied walnuts, and Gorgonzola cheese. After baking it, she added fresh baby lettuce on top of the other ingredients. Very, very delicious.
